Date-Sweetened Mustard Dressing

1/2 c. unsweetened applesauce
2 T. date paste (see recipe here)
2 T. stone-ground mustard
1 T. lemon juice or cider vinegar
1/4 c. water
Freshly ground black pepper, to taste

In a blender, combine applesauce, date paste, mustard, and lemon juice or vinegar, and water. Cover and blend until smooth. Season with pepper. 

Cover and chill until ready to serve.

Makes 1 cup.
