Avocado Chicken Salad
Combine cilantro, chives, dill, capers, lemon zest, lemon juice, garlic, salt, pepper, and the flesh from 1 avocado in a food processor; process until finely chopped, about 30 seconds. Add mayonnaise and yogurt, and process until smooth, 1 to 2 minutes.
Dice the remaining avocado and place in a medium bowl. Add the chicken and the dressing; stir gently until combined and evenly coated. Serve at room temperature or refrigerate until cold, about 2 hours.
Garnish with additional chives and lemon zest before serving, if desired.
Serves 6.

"Little Green Dress" Sauce for Everything
In a small food processor, mince the shallots and garlic, then stir them together in a small bowl with the red wine vinegar. Set mixture aside for about 20 minutes, to allow it to pickle.
Meanwhile, mince the olives, capers, and anchovies in the food processor. Transfer to a medium bowl.
Pick the leaves and small stems from the parsley and the leaves from the mint; mince in the food processor. Add to olive mixture.
Add the pickled shallot mixture, olive oil, lemon zest, lemon juice, hot sauce, and salt to the olive mixture. Stir it all together and let sit for a minimum of 30 minutes before serving.
Serving ideas: Serve over eggs at breakfast. Use as a topping for avocado toast. Stir into mashed avocado and serve with tortilla chips or crudites. Good with anything!
Sauce can be kept refrigerated in a sealed container up to 1 month. Make sure all the green is submerged in olive oil to prevent browning. Do not freeze.

Kitchen Sink Capellini
1 lb. capellini
2 T. olive oil, divided
2 garlic cloves, finely minced
1 28-oz. can diced tomatoes, drained
1 8-oz. can chickpeas, drained and rinsed
1 6-oz. jar marinated artichoke hearts, drained and chopped
1 4-oz. can sliced black olives or kalamata olives
1 T. capers, drained (optional)
1 t. dried basil or 1 T. fresh basil
Salt and freshly ground black pepper
1/4 c. roasted pine nuts (optional)
Place the sun-dried tomatoes in a small heat-proof bowl. Add boiling water to cover and let sit for 10 minutes to soften. Drain and cut into 1/4" strips. Set aside.
Cook the pasta in a large pot of boiling salted water until just tender, about 4 minutes.
Drain the pasta in a colander. Drizzle with 1 T. of the olive oil, toss to coat, and set aside.
In the same pot, heat the remaining oil over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Stir in both kinds of tomatoes, chickpeas, artichoke hearts, olives, capers (if using), basil, and then salt and pepper to taste. Cook over medium heat until hot, about 5 minutes.
Add the reserved pasta and toss gently to combine and heat through. Sprinkle with the pine nuts, if using, and serve immediately.

Chicken with Olives & Capers
1 lemon, cut into wedges
1 c. mixed pitted olives
2 T. drained nonpareil capers
Juice of 1 lemon
2 T. extra-virgin olive oil
Salt and freshly ground pepper
Preheat oven to 400 degrees with the rack in the middle position.
Place the chicken skin side up in a baking dish. Scatter the lemon wedges, olives, and capers on top of the chicken. Pour the lemon juice and olive oil over the chicken and sprinkle with salt and pepper.
Bake until golden, basting with the juices once, for 25-30 minutes or until juices run clear. Serve immediately.

Chicken Marbella
2 T. brown sugar
1½ t. dried oregano
3 T. red wine vinegar, divided
Kosher salt and pepper
6 cloves garlic
1 T. capers
½ c. prunes or dried apricots
¼ c. pitted green olives
4 small chicken legs, split (4 drumsticks, 4 thighs; about 2-1/2 lbs. total)
¼ c. fresh flat-leaf parsley
1 c. long-grain white rice
In a 5- to 6-qt slow cooker, whisk together the wine, brown sugar, oregano, 2 T. of the vinegar, and 1/4 t. each salt and pepper. Add the garlic, capers, prunes, and olives and mix to combine.
Add the chicken, nestling it among the olives and prunes. Cover and cook until the meat is tender and cooked through, on LOW for 5-6 hours or on HIGH for 3-4 hours. Gently stir in the remaining 1 T. vinegar and the parsley.
Thirty minutes before serving, cook the rice according to package directions. Serve the chicken, prunes, olives and cooking liquid over the rice.
Serves 4.

Salmon with Warm Olive & Lemon Sauce
1/2 c. green olives with pits (3-4 oz.), rinsed, pitted, and coarsely chopped
1 T. capers, drained and rinsed
4 T. extra-virgin olive oil, divided
4 arctic char or salmon fillets, skin on, 1/2 to 1/4" thick (5 oz. each)
Salt and pepper
1/2 c. loosely packed Italian parsley leaves, coarsely chopped
For sauce, zest and juice lemon. In a small saucepan, combine olives, capers, lemon zest, and juice. Slowly stir in 3 T. of the olive oil until combined. Warm over low heat 5-10 minutes, stirring occasionally. Do not simmer. Remove from heat.
Preheat broiler. Season fish with salt and pepper. Rub both sides lightly with remaining 1 T. olive oil. Place skin side down in a baking pan. Broil 7 minutes or until fish flakes easily with a fork.
Just before serving, stir parsley into dressing; spoon over fish.
Makes 4 servings.

Brown-Butter Caper-Raisin Sauce
1-1/3 c. sherry vinegar
1 t. granulated sugar
1/2 t. kosher salt
1/3 c. golden raisins
3 T. extra-virgin olive oil
2 T. capers
1/2 c. roughly chopped fresh flat-leaf parsley
1/4 t. black pepper
Melt the butter in a small skillet over medium heat. Cook, stirring occasionally, until the foam subsides and the butter turns golden brown, about 6 minutes. Pour into a small bowl, discarding the dark brown milk solids at the bottom of the skillet. Wipe the skillet clean.
Stir together the vinegar, sugar, and salt in the skillet; cook, stirring constantly, over medium-high heat until the sugar dissolves, about 2 minutes. Pour the hot vinegar mixture over the raisins. Let stand 10 minutes. Drain, reserving 1 T. of the vinegar mixture.
Return the brown butter to the skillet; stir in the oil and the reserved vinegar mixture. Cook over medium-high heat for 30 seconds. Remove from heat and stir in the raisins, capers, parsley, and pepper. Serve immediately or at room temperature.
Serve over cauliflower, flaky white fish, chicken, or plain couscous.

"More" Chicken
8 boneless, skinless chicken breast halves
1 lb. fresh mushrooms, sliced
1 c. pitted, coarsely chopped black olives
3 T. capers
1/2 c. chopped fresh parsley
2 t. chopped fresh oregano (or 1 t. dried)
2 t. chopped fresh basil (or 1 t. dried)
4 green onions, chopped
1/4 c. olive oil
1/3 c. lemon juice
Grated rind of 1 lemon
1/3 c. dry white wine
Pour butter into 8 x 12" pan. Add chicken; turn to coat. Sprinkle remaining ingredients on top. Cover and refrigerate 6 hours or more. Bake at 350 degrees for 40 min.
Serves 8.

Penne with Spinach, Feta, & Olives
1 T. balsamic vinegar
3 cloves garlic, crushed
6 c. hot cooked penne pasta
2 c. chopped fresh spinach
1/2 c. chopped kalamata olives
2 T. capers
3/4 c. feta cheese, crumbled
Combine oil, vinegar, and garlic. Add pasta and remaining ingredients and toss well. Serve immediately.
Serves 4.
