4 eggs
1 c. milk
1 c. flour
2 T. melted butter
2 T. sugar
1/8 t. salt
1 c. mashed cooked pumpkin or canned pumpkin
2 t. double-acting baking powder
3 T. butter
Syrup, honey, or jam
In a blender, combine eggs, milk, flour, melted butter, sugar, salt, pumpkin, and baking powder. Blend well until smooth. Let stand for 1 hour.
Bake on a well-greased griddle or in a skillet with 2-3 T. butter. Serve with syrup, honey, or jam.
Makes 16 pancakes.
