Coconut Blueberry Maple Ice Cream

1 13.5-oz. can unsweetened organic coconut milk
1 c. fresh or frozen blueberries, thawed
1 t. vanilla
1/2 c. maple syrup

Mix ingredients in a blender, until preferred texture is achieved (smooth or a little chunky). Pour mixture into ice cream maker. Churn for 25-30 minutes.
