1 unbaked 9" pie shell with top crust
2 large lemons
2 c. sugar
4 eggs
1/8 t. salt
Grate the peel from both lemons into a mixing bowl. Slice the lemons into the bowl in paper-thin slices. Sprinkle the sugar over them. Mix thoroughly and let stand 4-8 hours.
Beat eggs in a separate bowl until lemony in color. Stir into sugar mixture with salt. Pour into pie shell. Cover with top crust, pinching the edges together. Make several slashes in top crust for steam to escape. Bake in 450 degree oven for 15 minutes. Reduce heat to 350 degrees and bake 30-35 minutes more, or until knife inserted into the center comes out clean.
