3 eggs
2 c. sugar
1 c. vegetable oil (or coconut oil)
1 T. vanilla
2 c. peeled, grated zucchini
2 c. flour
1 T. cinnamon
2 t. baking soda
1 t. salt
1/2 t. baking powder
1 c. walnuts
Beat the eggs until fluffy. Beat in the sugar, oil, and vanilla until thick and lemon color.
Stir in the zucchini, flour, cinnamon, baking soda, salt, and baking powder. Fold in the walnuts.
Pour mixture into 2 oiled and floured loaf pans or muffin tin lined with paper baking cups. Bake at 350 degrees for 1 hour.
Makes 2 loaves or ? cupcakes.

6/12/16: This doesn't seem like anything special, but I've made it twice (once as bread and once as muffins) and people raved about it both times. It is very moist and dense, and freezes well.

DeleteI know, and I miss him! This cookbook was part of the fundraising to put him back up there, visually speaking. Have you been to Profile Plaza? It's nicely done.
