Apple Bread

1-1/2 c. unbleached flour
1/2 c. whole wheat flour
1 t. baking powder
1 t. baking soda
1/2 t. salt
2 large eggs
1/2 c. vegetable oil
2/3 c. firmly packed light brown sugar
1/2 c. orange juice
3/4 t. almond extract
2/3 c. raisins
3 finely chopped peeled apples

Preheat the oven to 350 degrees. Butter and flour a 9 x 5" loaf pan.

In a medium bowl, thoroughly combine the flours, baking powder, baking soda, and salt.

Beat the eggs in a large bowl, then beat in the oil, brown sugar, orange juice, and almond extract.

Stir in the flour mixture, then mix in the raisins and apples until evenly coated. Scrape into the prepared pan. Bake 70 minutes, or until a knife inserted in the center comes out clean. (If the bread begins to get dark on top before it's done, cover with a sheet of foil and continue baking.)

Let cool on a rack 10 minutes, then remove from pan. Cool completely before slicing, about 2 hours.

Makes 1 loaf.
