1/4 c. mayonnaise
2 T. flour
1/4 t. salt
Dash of pepper
1 c. milk
1 c. shredded cheese
4 medium potatoes, peeled, thinly sliced
1 medium onion, thinly sliced
3/4 t. salt
Paprika for garnish
For cheese sauce: In small saucepan, stir together mayonnaise, flour, salt, and pepper. Stirring constantly, cook over medium heat 1 minute. Gradually stir in milk until smooth. Stir in cheese. Stirring constantly, cook until thick (do not boil). Makes about 2 cups of sauce.
For casserole: In large bowl, toss together cheese sauce, potatoes, onion, and salt. Spoon into 1-1/2-quart casserole. Sprinkle with paprika. Bake at 375 degrees for 50-60 minutes or until potatoes are tender.
Makes 4-6 servings.
