Olive oil
Boneless, skinless chicken breasts
Newman's Own bombalina spaghetti sauce
Yellow onion, sliced thin
White or brown rice
Pepper
Pour a little olive oil into an oven-safe shallow baking dish with lid. Place chicken in dish, top with slices of onion, then pour on spaghetti sauce to cover. Bake at 350 degrees for an hour or more, until chicken is tender and edges of sauce start to blacken.
Prepare rice as per package directions. Serve chicken over rice, topped with plenty of pepper.
My own creation (adapted from my mother's technique for making Swiss steak).
