1 stick butter, melted
8 boneless, skinless chicken breast halves
1 lb. fresh mushrooms, sliced
1 c. pitted, coarsely chopped black olives
3 T. capers
1/2 c. chopped fresh parsley
2 t. chopped fresh oregano (or 1 t. dried)
2 t. chopped fresh basil (or 1 t. dried)
4 green onions, chopped
1/4 c. olive oil
1/3 c. lemon juice
Grated rind of 1 lemon
1/3 c. dry white wine
Pour butter into 8 x 12" pan. Add chicken; turn to coat. Sprinkle remaining ingredients on top. Cover and refrigerate 6 hours or more. Bake at 350 degrees for 40 min.
