Company Casserole a/k/a "Protestant Lasagna"

1 8 oz. package flat egg noodles
1 c. (8 oz.) cottage cheese
1 c. (8 oz.) sour cream
1 3-oz. package cream cheese, at room temperature
3 green onions, chopped
1/2 green pepper, finely chopped
1 lb. ground beef
1 15-oz. can tomato sauce
1 t. salt (optional)
1/4 t. garlic salt
1/8 t. pepper

Cook noodles per package directions; rinse with cold water and drain. Mix together cottage cheese, sour cream, cream cheese, green onions, and green pepper. Add noodles; mix well.

Cook ground beef until browned. Drain fat if necessary. Add tomato sauce, salt, garlic salt, and pepper; simmer 5 minutes.

Spread noodle mixture in 2-qt. casserole and top with tomato sauce mixture. (May freeze at this point.)

Bake at 350 degrees for 25-30 minutes or until top is firm and starts to brown.

Serves 6-8.

My mother made this every year for dinner on the evening we decorated the Christmas tree. It also makes a fine Christmas Eve dinner, served with Citrus Salad. It's the perfect dish for taking to friends and neighbors when someone is sick or has died.
