Citrus Salad

Red leaf lettuce
Navel oranges
Spanish (red) onion
Green onions
1 package Good Seasons Italian salad dressing mix
Salad oil and vinegar for dressing

Mix dressing as per package directions; chill.

Wash lettuce, dry well, and arrange on salad plates. Section oranges so all white pith is removed; save juice for another use. Arrange sections in a radiating pattern on lettuce. Slice onion thinly and arrange among orange sections. Chop green onions and sprinkle over salad. Chill.

Top with dressing just before serving.

My mother invented this lovely and refreshing salad to go with Company Casserole or Baked Mostaccioli, or anytime during the holidays. When I was growing up, it wasn't Christmas until we'd had this salad.
