1 5-oz. package saffron rice mix
1 15-oz. can black beans
3 T. fresh lime juice
1 t. chili powder
1/2 t. cumin
2 T. chopped cilantro, divided
Toppings: sour cream, green onions, cheddar cheese
Cook rice per package directions and keep warm.
Drain beans, reserving 2 T. liquid. Combine beans, liquid, lime juice, chili powder, and cumin in saucepan. Cook over medium heat until thoroughly heated. Stir in 1 T. cilantro. Serve over rice, sprinkled with remaining cilantro and topped with garnishes.
Serves 3-4.
