Creamy Cauliflower Soup

1 c. chopped yellow onion
2 cloves garlic, finely chopped
1 T. thyme
3 T. butter
10 c. cauliflower florets
Salt and pepper to taste
4 c. low sodium vegetable broth
1/2 c. heavy cream
Chives and bacon for garnish (optional)

Cook onion, garlic, and thyme in butter until tender. Add cauliflower florets, salt, and pepper. cook, covered, until the cauliflower is tender. Add broth and cook for 20 min. more. Add cream and cook for 5 more min.

Transfer to a blender and puree until smooth. Serve garnished with chopped chives and bacon bits, if desired.

Serves 4.
