Cauliflower Cranberry Salad

4-1/2 c. thinly sliced cauliflower
1/2 c. finely chopped red onion
1 c. parsley leaves
1/2 c. dried cranberries
1 T. grainy mustard
1 T. orange juice
1 clove garlic, finely chopped
1 t. orange zest
6 T. olive oil
Salt and pepper to taste

Combine cauliflower with onion, parsley, and cranberries. Whisk together mustard, orange juice, garlic, orange zest, and olive oil. Season with salt and pepper.

Toss the cauliflower mixture with the dressing. Marinate for 20 minutes.

Serves 4.
