Balsamic and Parmesan Roasted Cauliflower

1-2 large cauliflower heads, sliced into 1-inch-thick slices (about 8 c.)
2 T. extra-virgin olive oil
1 t. dried marjoram
1/4 t. salt
Freshly ground black pepper
2 T. balsamic vinegar
1/2 c. Parmesan cheese, finely shredded

Preheat oven to 450°F.

Toss together cauliflower, oil, marjoram, salt, and pepper. Roast on a large rimmed baking sheet until starting to soften and brown on the bottom, 15 - 20 min.

Remove from oven and toss with vinegar. Sprinkle with cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated, 5 - 10 min. more.

Serves 4.

  1. 8/30/16: I cut the cauliflower into florets and was out of marjoram, but it made no difference. The result was scrumptious!
