Emerald Dressing

1 c. mayonnaise
1/2 c. spinach leaves
5 watercress sprigs
1/2 small onion
1 small clove garlic
1 T. lemon juice
1-1/2 t. sugar

Place all ingredients in a blender, cover and blend until smooth. Cover and chill. Serve over tomato slices or fish.

Makes 1-1/4 cups.
