2 medium sweet potatoes
1 T. canola oil
1/2 t. kosher salt
1 12-oz. Eat Smart Sweet Kale Salad Kit
1/2 c. crumbled feta cheese
Preheat oven to 350 degrees. Peel potatoes and cut into 1/2" cubes. Coat potato cubes with canola oil and salt, then place on baking sheet. Bake 12-15 minutes or until tender when pierced with a fork. Let stand 3 minutes to cool.
Place all salad kit ingredients together in a bowl. Add potatoes and feta; toss and serve.
