Apple-Cardamom Coffee Cake

1-3/4 c. all-purpose flour
1 t. baking powder
1/2 t. baking soda
1/2 t. ground cardamom
1/2 t. salt
1/8 t. ground cloves
4 T. unsalted butter, softened
1/2 c. light brown sugar
1 egg
2/3 c. buttermilk
2 c. Gala apple, peeled and diced into 1/2" cubes
3/4 c. all-purpose flour
1/4 c. light brown sugar
3 T. cold unsalted butter, cubed
1/2 t. ground cardamom
1/4 t. salt

Heat oven to 375 degrees. Coat an 8" square baking dish with nonstick cooking spray; dust with flour on the bottom and sides.

Whisk flour, baking powder, baking soda, cardamom, salt, and cloves together; set aside.

In a separate bowl, beat butter and brown sugar with a hand mixed for 2 minutes. Beat in egg and buttermilk. Slowly add flour mixture, beating until just combined. Fold in apple. Transfer to prepared baking dish, spreading into an even layer.

In another bowl, combine flour, sugar, butter, cardamom, and salt, with hands, breaking up butter into smaller pieces. Scatter over batter. bake 35-40 minutes, until browned and a toothpick inserted in the center comes out clean.

Makes 1 cake.
