2 T. fresh lemon juice
1-1/2 T. chopped fresh thyme
2 t. Dijon mustard
1/2 t. salt
1/2 t. black pepper
1/4 c. extra virgin olive oil
Whisk together lemon juice, thyme, mustard, salt, and pepper in a medium bowl until smooth. Add olive oil in a slow steady stream, whisking constantly until smooth.
Serves 4.
