Cranberry Bread

1 c. sugar
1 T. grated orange peel
3/4 c. water
1/3 c. orange juice
2 T. oil
1 egg
2 c. all-purpose flour
1-1/2 t. baking powder
1 t. salt
1/2 t. baking soda
1 c. halved fresh or frozen (not thawed) cranberries
1 c. chopped nuts

Grease loaf pan. Combine sugar, orange peel, water, juice, oil, and egg. Add flour, baking powder, salt, and baking soda. Stir until just mixed. Fold in cranberries and nuts. Bake in prepared pan at 350 degrees for 50-60 minutes or until tests done. Cool 10 minutes and remove from pan for further cooling. Store in refrigerator.

Makes 1 loaf or 6 minis.
