2 avocados, peeled and sliced
2 small heads romaine lettuce, torn
1 c. sliced mushrooms
1 c. sliced cucumber
1 c. sliced cherry tomatoes
6 oz. cooked chicken, cut into strips or chunks (optional)
1 small red or green pepper, cut into rings
1-2 green onions, sliced
1/3 c. salad oil
1 T. orange peel, grated
Juice of 1 lemon
1-1/2 T. brown sugar
1 clove garlic, minced
1/2 t. ground cumin
1/2 t. oregano
1/4 t. white pepper
Arrange avocados, lettuce, mushrooms, cucumber, tomatoes, chicken, pepper, and green onions on plates. Combine salad oil, orange peel, lemon juice, brown sugar, garlic, cumin, oregano, and white pepper; mix or shake well and pour on.
Also works nicely with tuna.
Serves 2 for a full meal.
