Baked Mostaccioli

1 green pepper, thinly sliced
1 medium onion, sliced into rings
olive oil
1 lb. "hamburger" or "sausage" soy crumbles
4 c. meatless spaghetti sauce
1 c. water
16 oz. mostaccioli, cooked 8 min. and drained
16 oz. shredded mozzarella cheese
1/2 c. grate Parmesan cheese

Saute pepper and onion over medium-high heat in a little olive oil for 6-8 minutes. Stir in soy crumbles, spaghetti sauce, and water. Bring to a boil; reduce heat and simmer 10 minutes.

Spread 1 c. sauce in a 13 x 9 x 2" baking dish. Top with half the mostaccioli, 2 c. mozzarella, and the Parmesan. Spread on 2 c. sauce. Layer remaining mostaccioli, sauce, and mozzarella. Bake at 350 degrees for 30 minutes or until heated.
