4 thinly sliced stalks of celery
1/4 c. celery leaves
2 T. extra virgin olive oil
1 t. fresh lemon juice
1/2 t. finely grated lemon zest
salt and freshly ground black pepper
1 oz. shave Parmesan cheese
Toss celery, celery leaves, olive oil, lemon juice, and lemon zest in a large bowl. Season with salt and pepper to taste. Gently toss in Parmesan cheese. Serve cold or at room temperature.
