1 bunch watercress (4 cups)
1 unpeeled green apple, cut into 1/2-inch pieces
1/4 cup orange juice
1 T. olive oil
5 T. honey, divided
2 T. chopped fresh mint
4 oz. feta
freshly ground black pepper
In a large bowl, combine watercress, apple, orange juice, olive oil, 1 T. honey, and mint; toss well. Break up feta into small pieces. Divide salad among 4 plates and top each with some of the feta. Drizzle each with 1 T. additional honey and top with pepper.
