Lime Avocado Dressing

1 ripe avocado, peeled, pit removed
3/4 c. sour cream
Juice of 1 lime
2 cloves garlic, peeled
1 t. kosher salt
1 t. freshly ground black pepper

Whirl all ingredients in a food processor until well mixed and creamy.

Store in an airtight container and refrigerate up to 5 days. (The lime juice will keep it from turning brown.)

Makes 1 c.
