1 lb. fresh or frozen green beans
4 T. fresh cilantro, finely chopped
2 limes (for juice)
1/2 c. diced red onion
1/4 c. olive oil vinaigrette salad dressing of choice
1/2 t. kosher salt
1/2 c. blanched slivered almonds
If beans are fresh, snap ends and break or cut beans into 1" pieces Microwave or steam green beans until cooked but still crisp.
Whisk together cilantro, juice from the limes, onions, vinaigrette, and salt until thoroughly blended. Toss with green beans until evenly coated. Just before serving, spinkle almonds on top.
Serve warm or chill until ready to serve.
