1 lb. green beans, tips removed
3 T. olive oil
2 T. fresh lemon juice
Freshly ground black pepper to taste
2 T. minced fresh dill or 1 t. dried dill
3 T. slivered red onion
1/4 c. crumbled feta cheese
Salt
Steam the green beans until crisp-tender. Rinse under cold running water until cold throughout. Drain very well and dry with paper or cotton towels.
Combine olive oil, lemon juice, and pepper in a serving bowl. Stir in the green beans and toss. Sprinkle on dill and onion and toss again. Let sit 30 minutes or cover and chill for up to 4 hours. Serve at room temperature. Just before serving, sprinkle on the feta cheese and toss again. Taste for salt.
