Tasty Salad Dressing

1 shallot, chopped
1 T. prepared mustard
juice of 1 lemon
Dollop of good quality olive oil

Mix together shallot, mustard, lemon juice, and just enough olive oil to make it liquid. Use as little oil as possible.

Makes a very strong dressing, so a little goes a long way.
