Pimiento Goat Cheese Spread

1 11-oz. log fresh goat cheese, softened
4 oz. smoked cheddar cheese, shredded
1/2 c. mayonnaise
1/4 c. drained jarred pimientos, coarsely chopped
2 scallions, white and green parts, thinly sliced
1 T. sweet pickle relish
1 t. onion powder
1 t. Tabasco sauce
Salt and freshly ground pepper
Halved radishes and celery sticks, for serving

In a medium bowl, using a wooden spoon, blend the goat cheese with the cheddar cheese, mayonnaise, pimientos, scallions, pickle relish, onion powder and Tabasco; season with salt and pepper.

Transfer the spread to a bowl and serve with radishes and celery. Also makes a nice spread for a [veggie] burger.

Serves 4-6.
