Coffee Spice Cookies

2 t. instant coffee
1 t. hot water
1/2 c. butter flavored shortening
3/4 c. firmly packed brown sugar
1 large egg
1/2 t. vanilla extract
1-1/2 c. flour
1 t. baking powder
1 t. ground cinnamon
1/4 t. ground nutmeg
1/4 t. salt
1/3 c. chocolate decorator bits

Dissolve instant coffee in hot water. Beat shortening, brown sugar, egg, vanilla, and coffee mixture in large bowl until light and fluffy. Mix in flour, baking powder, cinnamon, nutmeg, and salt.

Divide dough into 2 equal parts. Shape each half into a roll 7" long and 1-1/2" in diameter. Roll in chocolate decorator bits, pressing lightly. Wrap tightly. Refrigerate at least 2 hours.

Heat oven to 375 degrees. Cut rolls into 1/4" slices. Place 1" apart on ungreased baking sheet.

Bake at 275 degrees for 6-8 minutes or until set.

Makes 4 dozen.
