3 T. olive oil, divided
2 T. lime juice
3/4 c. cumin seeds
Salt and pepper to taste
1 pita bread
1 c. fresh corn kernels
1 c. halved cherry tomatoes
4 quartered radishes
2 small cucumbers, sliced
Fresh mint
Combine 2 T. olive oil, lime juice, cumin, salt and pepper. Toast the pita bread, then brush with remaining 1 T. olive oil. Tear into pieces and toss with corn, tomatoes, radishes, cucumbers, and the dressing. Top with mint.
