4 c. chopped seedless watermelon*
1/2 c. tequila
1/4 c. fresh lime juice
2 T. light agave nectar
1/2 t. kosher salt
*Cut the top and bottom off of the watermelon so it can sit flat on a cutting board. Run a sharp knife down the sides, taking off the rind. Cut it into rounds, and then cut rounds into chunks.
Place watermelon is a 9 x 13-inch baking dish. Whisk together tequila, lime juice, and agave nectar in a small bowl. Pour mixture over watermelon, gently stirring to coat. Cover and chill 45 minutes to 8 hours. Sprinkle with kosher salt just before serving.
Makes 6 servings.
