Baked Eggs with Spinach & Tomatoes

Vegetable cooking spray
1 T. low-fat garlic-and-herb spreadable cheese (Rondele)
8 fresh spinach leaves
1 large egg
2 T. jarred pasta sauce
1 T. half-and-half
1/8 t. freshly ground black pepper
Toast

Preheat oven to 350 degrees. Coat 6 (6-8-oz.) ramekins with cooking spray.

For EACH ramekin, layer in cheese, spinach leaves, egg, pasta sauce, half-and-half, and pepper. Place on a backing sheet. Bake 20-25 minutes or until cooked to desired firmness. Let stand 5 minutes. Serve with toast.
