Cheese Straws

1 c. all-purpose flour, plus extra for work surface
1/4 t. table salt
1/2 c. cold unsalted butter, cut into small cubes, plus extra for baking sheets
1 c. sharp cheddar cheese, grated [divided]
3 T. very cold water
Dash of Tabasco

Preheat oven to 400 degrees and grease two baking sheets.

In a large bowl, whisk together flour and salt. Using your fingers or a pastry blender, cut butter and 1/2 c. cheese into flour/salt mixture. Add water and Tabasco; then turn dough out onto a floured board and lightly knead in remaining cheese until dough comes together. Roll dough into a 1/4-inch-thick rectangle; then cut into strips 1/2 inch wide and 5 inches long. Arrange strips on prepared baking sheets, and bake until nicely browned, 10-12 min. Serve warm or at room temperature.

Makes about 2 dozen straws.
