Applesauce Oatmeal Bread

1-1/2 c. rolled oats
1-1/4 c. unbleached flour
1 t. baking powder
3/4 t. baking soda
1/2 t. cinnamon
1/2 t. freshly grated nutmeg
2/3 t. salt
2/3 c. raisins
2 large eggs
1/2 c. firmly packed light brown sugar
1/4 c. vegetable oil
1 c. applesauce

Preheat oven to 350 degrees. Butter and flour a 9 x 5" loaf pan.

In a large bowl, thoroughly combine the oats, flour, baking powder, baking soda, cinnamon, nutmeg, salt, and raisins.

In a medium bowl, beat the eggs. Beat in the brown sugar, oil, and applesauce. Pour this into the oat mixture and stir until just evenly moistened. Scrape into the prepared loaf pan.

Bake 50 minutes or until a knife inserted in the center comes out dry. Let sit 5 minutes, then remove from pan and cool completely on a wire rack, at least 2 hours.

Makes 1 loaf.
